Sea bass tartare with avocado and baeri caviar

  • 800g fresh sea bass, skinless
  • 40g Spherika sturgeon caviar (10g per serving)
  • 1 ripe avocado
  • Soy sauce
  • Extra virgin olive oil
  • Lime
  • Salt and pepper
  • Cilantro sprouts for garnish

Preparation

Preparing the tartare

  • Carefully clean the sea bass and remove all bones.
  • Finely chop the sea bass until you achieve a tartare texture, then season with soy sauce, olive oil, and lime juice.

 

For the avocado

- Peel and slice the avocado into thin slices.

 

Plating

  • Arrange the avocado slices on each plate, forming a ring in the center.
  • Season with salt, pepper, and a drizzle of extra virgin olive oil.
  • Place the sea bass tartare on top of the avocado.
  • Top each serving with a teaspoon of sturgeon caviar.
  • Garnish with fresh cilantro sprouts.
