Ingredients (serves 4):

1 jar of crystal pepper strips or fillets

100 g of creamy cheese with pineapple and almonds (you can find it ready-made or mix cream cheese, diced dehydrated pineapple, and toasted sliced almonds).

4 large fresh prawns

Flaky salt (optional)

Water and salt for boiling the prawns

Preparation:

Cook the prawns:
Bring a pot of salted water to the boil. Once boiling, add the prawns and cook for 2 minutes. Remove quickly and transfer to a bowl of iced water to stop the cooking. Peel the prawns and set aside.

Prepare the base:
Place a bed of crystal pepper strips on each plate or in appetiser spoons, making sure they are well spread out.

Add the cheese:
On top of the peppers, place a spoonful of pineapple and almond cheese. If you prefer it creamier, you can whip it slightly before plating.

Assemble the appetiser:
Place one cooked prawn on top of each portion of cheese.

Finish with the spheres:
Carefully add a few Spherika extra virgin olive oil spheres on top of the prawn and cheese. Use a small spoon to avoid breaking them.
